Discovered Your Cooking Talent with Alce Nero Organic Pasta

SPAGHETTI CARBONARA
How about a change from tomato-based pastas? Try this no-cream carbonara. All you need is Alce Nero pasta, eggs, cheese, mushrooms and beef or turkey bacon. Don’t have bacon? Substitute with minced beef or chicken. Don’t have parmesan cheese? Use mozzarella, cheddar, or cream cheese.

In just 30 minutes you can twirl up a café-quality carbonara meal for four.

This is an Italian carbonara recipe using no cream. All you need is pasta, eggs, cheese,
mushrooms and beef bacon!
Preparation time: 10 minutes
Cooking Time: 15 minutes
For: 4 people

300g Alce Nero Organic Spaghetti.
1 cup grated parmesan cheese for cooking
6 beef or turkey bacon, sliced
1 cup sliced mushrooms
2 eggs 1 egg yolk
1 tsp Salt
Black pepper, if desired
½ cup parmesan cheese for serving


How To Cook
1. Cook spaghetti with the salt until al dente. Drain but keep one cup of the cooked
water.
2. Beat the eggs, black pepper and cheese in a bowl and set aside.
3. In a pan, heat cooking oil with medium heat. Add the beef and mushrooms, fry for
about 5 minutes.
4. Reduce the heat to low and add the cooked spaghetti in.
5. Pour in the egg and cheese sauce, quickly mix it with the spaghetti and beef until it
is well coated. Make sure it doesn’t become scramble egg. Add one tablespoon of
cooked pasta water at a time until you reach the desired consistency of sauce.

6. Remove from heat and serve immediately. Add extra parmesan cheese on top.


MACARONI CHICKEN SOUP
Chicken soup is perfect for the RMCO phase as we recover as a nation because it is an immunity booster, and a feel good food. Good chicken soup is a simple one pot wonder that  needs a lot of chicken and time. Add Alce Nero organic macaroni to savour more of the hearty soup, and increase the health benefits. Be prepared for kids and adults asking for more of this scrumptious soup!


CHEESY BAKED PENNE WITH EGGPLANT

Just four ingredients and 25 minutes to create this sublime dinner. Cook Alce Nero organic penne, alternate layers of pasta, Alce Nero pasta sauce, eggplant(or any vegetable available) and cheese in an oven proof dish, topping it with more cheese. Bake for 20 minutes or until cheese is melted. And it is done. So simple, so tasty and so Instagrammable.


SPICY FUSILI WITH VEGETABLES
A stir-fried tomato-based fusilli that is perfect for vegetarians or for when you want something light, and quick. You will definitely get your five portions of vegetables with this healthy and delicious Asian-inspired organic Alce Nero pasta meal. Works with any vegetables that you have in your fridge. For a prettier presentation use a selection of colourful vegetables such as carrots, tomatoes, capsicum, corn or cucumbers.


TUNA PASTA SALAD
Venturing out with family again during the RMCO but perhaps you still prefer a homecooked picnic salad? This tuna pasta salad uses organic Alce Nero penne to provide a nutritionally balanced meal with a mix of crunchy and smooth textures. Easy to prepare, and delicious hot or cold. Add Asian flavours with lemon grass, spring onion, cili padi or even sesame oil.

Preparation time: 10 minutes
Cooking Time: 15 minutes
For: 4 people
250g Alce Nero organic penne
280g Ayam Brand™ tuna light flakes in oil
100g Ayam Brand™ whole kernal corn
50g Carrot, cut into strips
100g Cucumber, cut into chunks
50g Red cabbage, shredded
80g Onion, shredded
5g Mint leaves
90ml Alce Nero extra virgin olive oil
30ml Alce Nero apple cider vinegar
1 clove Garlic, chopped
Salt, pepper and garlic powder

How to Cook
1. Whisk oil, vinegar, garlic, together well then season to taste with salt and pepper.
2. Bring a large pan of lightly salted water to the boil over a medium heat. Add the pasta
and cook about 10-12 minutes.
3. Drain thoroughly. Transfer to a bowl and mix in the dressing.
4. Combined all ingredients in salad bowl. Check the seasoning adding more salt and
pepper if necessary.
5. Arrange the pasta mixture in a large serving bowl, garnish and serve.
