Alce Nero Whole Wheat Laksa Carbonara

Kids, and many adults love carbonara but traditional carbonara can be a bit heavy, and bland to local palates. Alce Nero combines spicy laksa with creamy carbonara for a fusion fantasy that will have you hungry for more.



Cook the Alce Nero Whole Wheat Spaghetti according to package instructions. Drain and set aside. In a bowl, whisk the eggs and season with a pinch of salt and black pepper. Set aside. Heat a bit of cooking oil in a pan, add the laksa paste and sauté for a few minutes until fragrant. Pour in the Ayam Brand Organic Coconut Milk and bring the mixture to a gentle simmer. Slowly drizzle the whisked eggs into the laksa mixture while continuously stirring to create a creamy texture. Add cooked chicken and prawns to the laksa carbonara sauce.



Toss the cooked pasta into the laksa carbonara sauce, ensuring the pasta is well coated. Season with more salt and pepper to taste as needed. Serve the Alce Nero Laksa Carbonara in individual bowls, garnished with freshly chopped cilantro leaves and enjoy.


Prep time: 5 minutes, cook time: 25 minutes, serves: 3-4 pax



Alce Nero Rendang Bolognese

Spaghetti bolognese is for many of us the quintessential Italian pasta, although lacking in the spices that local tastebuds crave. Try Alce Nero rendang bolognese for a fusion of the best of Italian and Malay culinary culture.

Cook the Alce Nero Tricolore Spaghetti according to the package instructions. Drain and set aside. Heat a tablespoon of Alce Nero Extra Virgin Olive Oil in a pan over medium heat. Add chopped onion and minced garlic, sauteeing until fragrant. Add minced beef to the pan, brown until cooked through, breaking it up as you stir. Stir in the Ayam Brand Rendang Paste, ground cumin, and ground coriander. Cook for five minutes to infuse the flavours.

Add diced carrot and celery to the pan. Cook until the vegetables start to soften. Pour in the Ayam Brand Chopped Tomatoes, Ayam Brand Organic Coconut Milk, beef or vegetable broth, and Ayam Brand Tomato Puree. Stir well and let the mixture simmer over medium- low heat allowing the flavours to meld together and the sauce to thicken. Season with salt and pepper to taste. Serve the rendang bolognese sauce over the cooked Alce Nero Tricolore Spaghetti. Garnish with freshly chopped cilantro leaves for a burst of freshness & enjoy.


Prep time: 10 minutes, cook time: 40 minutes, serves: 4-5 pax



Alce Nero Stir-Fried Pesto Pasta

Pesto is basically a thicker Hakka lei cha so the fusion element is in the stir-frying of the Alce Nero Stir-fried Pesto Pasta.


Cook the Alce Nero Spaghetti according to the package instructions. Drain and set aside.


In a food processor, combine the fresh basil leaves, pine nuts, grated Parmesan cheese, minced garlic, and a pinch of salt and pepper. Pulse until the ingredients are finely blended. With the food processor running, slowly drizzle in the Alce Nero Extra-Virgin Olive Oil until the mixture forms a smooth pesto sauce. Adjust the seasoning to taste.


Heat butter in a pan over medium heat. Add chopped onion and sauté until fragrant and translucent. Add bell peppers, cherry tomatoes, and zucchini to the pan and sauté for a few minutes until they are slightly tender. Toss the cooked Alce Nero Spaghetti into the pan with the sautéed vegetables. Add the prepared pesto sauce to the pan and mix everything together until the pasta is evenly coated. Cook for an additional couple of minutes to warm up the pesto and combine the flavours. Serve the stir-fried pesto pasta in individual plates, garnished with extra grated Parmesan cheese and enjoy.

LET’S CELEBRATE A DELICIOUS AND HEALTHY CHRISTMAS AND NEW YEAR WITH U.S POTATO FESTIVE DISHES !


Christmas season now! Everyone is looking forward to welcoming some seasonal cheers. This has been a challenging year with the Covid-19 pandemic; hence most of us are not planning to attend any major Christmas parties.  Many of us will appreciate the opportunity to just be able to sit down and enjoy healthy and nutritious meals with family and friends during the festive holidays.

 

While going through the dishes you plan to prepare for Christmas, here are a few wonderful U.S. potato-inspired festive dishes!   U.S. Potatoes are not only nutritious and healthy, but also versatile.  You can concoct a wide repertoire of recipes for the holidays ranging from soup, appetisers, hot dishes to even desserts!  

 

According to dietitian Indra Balaratnam, Christmas time could be a stressful and over- eating experience.  “Yes, meals should look appealing but never ignore the healthy attributes aspects of your festive dishes.



Dishes can be both delicious and nutritious. A good way to add beneficial nutrients to your holiday meal is to include U.S. potatoes. 

 

U.S. Potatoes are an excellent source of vitamin C (30% of the DV), which plays a key role in supporting the body’s immune system.  It’s always good to have natural Vitamin C even during the festive season – and all year.  

 

U.S. Potato gives you 15% of your daily potassium serving, and that’s more than what a medium banana provides.  Potassium is a mineral that is an electrolyte for muscles to function well. It gets lost when you sweat, so it needs to be replenished to keep your performance optimal.

 


A medium U.S. Potato with the skin on also provides 2 grams of fiber. Fiber has many benefits, one of which helps you to feel comfortably full for longer. “This can help you to avoid over-eating and unnecessary weight gain during the festive holidays when one tends to over-eat or if your job is keeping you sedentary. 

 

One medium U.S. Potato gives you 110 calories of easy-to-digest calories, making it a good choice food to provide you that extra to fuel the demands of your active routines during Christmas. It has zero fat, so it won’t weigh you down and great for a “less fat” Christmas feasting!

 

If you are planning to have a more active 2021, be sure to you will be pleased to know that U.S. potatoes provide the complex carbohydrates, potassium, fiber and vitamin C you need to perform at your best.

Video 1 : U.S. Russet Potatoes Mushroom Cheese Casserole

U.S. RUSSET POTATOES MUSHROOM CHEESE CASSEROLE 


Nutrition packed U.S. Russet Potatoes make this luscious dish a stand-out on your festive table this year for the whole family!  

 

Serves: 6

Ingredients:

2 medium size Russet U.S. Potatoes (approximately 450 grams) -- thinly sliced

200 grams white button mushrooms

100 grams yellow onion -- thinly sliced

1 tablespoon (15 grams) butter 

2 cloves garlic – finely minced 

1 tablespoon wheat flour 

1 cup (250 ml) cups nonfat (skim) milk 

120g low-fat cheese (6 slices low fat cheese slices) 

½ teaspoon salt 

½ teaspoon black pepper 

½ teaspoon cayenne pepper (optional)

English parsley -- chopped (to garnish)

 

Method:

·       Heat oven to 180 degrees Celsius. 

·       Line the thinly sliced U.S. potatoes into a lightly buttered baking dish

·       Melt butter in a small pot over low-medium heat;

·       Add in onion and mushroom cook stirring occasionally until tender (about 5 minutes). 

·       Stir in flour, then slowly add in the skim milk and stir till well combined. Bring to a slight simmer.

·       Stir in 120 grams low fat cheese, salt, black pepper & cayenne pepper 

·       Pour mixture into prepared baking dish then spread out to coat the thinly sliced potatoes.

·        Bake in the oven uncovered for 45 minutes. 

·       After 45 minutes cooking time, cover with foil and continue to bake another 10 minutes more. 

·       Garnish with finely chopped English parsley

Video 2 : Honey Mustard Glazed Hasselback U.S. Potatoes

HONEY MUSTARD GLAZED HASSELBACK U.S. POTATOES

 

Serves: 6

Ingredients:

1 kg U.S. Potatoes (mix of U.S. Russets, U.S. Red Potatoes or U.S. Blue-Purple Potatoes)

2 teaspoons olive oil

 

To make the Honey Mustard Glaze:

2 Tablespoon melted unsalted butter

4 teaspoons honey

4 teaspoons lemon juice

2 teaspoons mustard

Pinch of salt & crushed black pepper 

 

Method:

·       Preheat oven to 200 degrees Celsius

·       Wash and pat dry the U.S. Potatoes

·       Slice the U.S. Potatoes thinly Hasselback-style & arrange on a baking tray lined with baking paper.

·       Lightly brush the U.S. Potatoes with a little olive oil and bake for 30 minutes

·       Mix all the ingredients for the honey mustard glaze into a small bowl.

·       After 30 minutes, remove the potatoes from the oven and brush with half the honey mustard glaze over the U.S. Potatoes and return to bake 10 more minutes.

·       After 10 minutes, brush with some more of the lemon honey glaze & bake for another 10 minutes till cooked.  

·       Remove from oven and garnish with a dash of salt, black pepper, finely chopped

Trinity Kids Malaysia Parenting Talk Series | Centred on Child Development and Wellbeing

 

COVID-19 pandemic has make us parents upside down. Glad that first episode of #PlanTheNextGen series comes amid a resurgence in COVID-19 cases. Parents are worried about the family and kids health during this pandemic. How to make sure our kids are in healthy condition? How to avoid family and kids from COVID-19 infectious? There are many questions pop up in parents mindset. Looking for solutions to overcome it.  

 

Trinity Kids Malaysia hosted the first episode of a talk series centred on child development and wellbeing, titled ‘Navigating COVID-19 Second Wave: What Are We Really Doing to Protect Our Children?’. Moderated by television personality Daphne Iking, the speaker line-up for the first episode of this series consisted of Daisy Ng, Founder of Trinity Kids Malaysia; Dr Ng Yi-Ki, paediatrician at Baby & Beyond Clinic; and Wong Chui Ling, entrepreneur and television/radio host.

 

“We are living in unprecedented times, and as we go through our days just trying to make sense of everything that is happening around us, it is important for us to be mindful of our children’s safety and wellbeing as we embrace the new normal,” said Daisy Ng, Founder of Trinity Kids Malaysia.


“What I realised was that parents had so many varied questions about keeping their children safe, well, and happy during these trying times; but they don’t necessarily have the answers. That is why we started this conversation series - to bring parents together to share knowledge and experiences in areas like managing routines and adapting to our children’s needs,” added Daisy.

The speakers discussed ways in keeping children safe during these trying times, including daily hygiene practices for children of various age groups.

 

“The risk of transmission among children is at least 50 percent lower than adults. Let us not be too obsessive to the point where we scold our kids if they touch their eyes or if they do not wear their masks. What we can do as parents is to teach them to be mindful and wash their hands constantly,” said Dr Ng.

 

Dr Ng also emphasised the importance of children carrying out physical activities outdoors as one of the ways to boost their immunity.

 

Chui Ling shared her experience managing herself at public engagements for the safety of her children, as well as managing her children who constantly want to revert to their normal routines.

 

“I organised a birthday party for my child a few months back. It was a smaller scale celebration, and I was very particular about who I invited to the party. But if anyone asks whether they can organise a party during this time, I would advise against it,” said Chui Ling.


One of the questions that was posed to the panellists was whether it is a safe time for children to go to school, especially at a time when COVID-19 cases are seeing a spike.


 

“It boils down to trust towards the schools that your children attend. Are they doing the right thing and taking the right measures? The government has given clear guidelines for schools to create a safe environment for children,” said Daisy.

 

“What is important is to keep in mind that children should have an avenue to channel their energy in a healthy manner. That channel can be in your home or at school, as long as it is safe,” added Daisy.

 

Daisy spoke about how parents who enrol their children at Trinity Kids have been very helpful in the process of placing safety measures in place – designing spray booth and installing temperature scan machines that utilises Artificial Intelligence (AI) to automate facial recognition, among others.

 

“We strive to manage the environment that we expose our children to at Trinity Kids through community efforts with the parents. It is only through collaboration that we can make this world a safer place for our children,” said Daisy.
