Incredible European Cheese Raclette That Melt Your Heart!


If the only melted cheese you’ve tried is on pizza or a toastie, then you have a lot to experience in the incredibly satisfying world of molten cheese. But when it comes to melting cheese not all cheeses are equal – some melt better than others, allowing unlocked textures, flavours and taste to ooze out. 


Chef Pierre Gay, a cheese master, cheese connoisseur and expert from France, shared his extensive knowledge on European cheese through a Raclette party jointly organized by the French Interbranch Dairy Organization and European Union, to promote the pre-eminence and finesse of European Cheese. 


Raclette is a fairly new concept in Malaysia and for a country that loves cheese so much, this is an experience that Malaysians do not want to miss,” explains Chef Pierre Gay. “Raclette is a cheese made of cow milk that has been broiled or melted under direct heat until oozy and a bit crispy and usually scraped over potatoes, crunchy vegetables or cured meats” says Chef Pierre Gay. Raclette also know as roasted cheese. [2]


He went on to explain that watching the cheese melt and being scraped over the food is part of the sensory experience of a Raclette. Chef Pierre Gay is the owner Pierre Gay Fromagerie – one of the oldest cheese houses in Annecy, in the Rhone-Alps in eastern France.



The fromagerie known in the region for its fine cheeses was started in 1935, and Pierre took over the company in 1989 from his father. Pierre’s dedication and efforts paid off when he was crowned Meilleur Ouvrier de France (MOF) year 2011, a recognition of being the top in his trade.


He stated the secret to choosing the right cheese for a Raclette is the moisture content “The more moisture the cheese has, the better it melts. Generally European cheeses are more suited for Raclettes and the favourites are the signature Raclette Cheese, Emmental and Comte. Once melted they will have a nuttier, sweeter flavour.”


With a mission to educate the public in Malaysia of the different varieties of European cheeses, and how best to enjoy them, Chef Pierre Gay gave an insight into the world of European cheese through a Raclette Party recently at Cocott’ KL. 


The Chef used Raclette cheese which he melted in a large Raclette machine, then scraped over the cured meats and condiments to the delight of the guests. “The Raclette cheese is an excellent melting cheese and the main cheese used in raclettes and fondues. Pungent yet savoury, the Raclette’s pH level gives it the perfect melting point resulting in a molten liquid that is stringy and holds its shape at the same time,” he added.


Members of the media and guests also had a chance to melt and enjoy Brie, Reblochon, Fourme D’Ambert, Comte, Saint Nectaire, Gouda and Scamorza over table top Raclette machines, enjoyed with various cooked and raw vegetable such as Sliced Fresh Pepper, Button Mushroom, Tomatoes, Corn Kernels, Sliced Green Onions, Pineapple, Baked Potatoes, Cooked Carrots & Peas, Sliced Conference Pears, Sliced Green Apples and Seedless Grapes along with different meats including lamb, beef bacon, smoked chicken and sausages.



The tantalizing spread also featured baguette bread, trimmings such as silverskin onions, gherkins/cornichons and spices such as pepper, salt and chilli flakes.


Mouse mommy and MR love the Reblochon has a slight scent of the cellar and a mild fruity taste with an intense nutty aftertaste. The cheese that melted on baked potatoes and mushroom was nice to eat.


Gouda Cheese taste slightly durian taste and just eat it raw without cook. Mouse mommy loves it so much! I take this opportunity to google what is exactly gouda cheese make of. Gouda cheese is the most nutritious cheese choice with contains of Vitamin K. [1]


Surprisingly seedless black grapes was perfectly match with the cheese! Mouse mommy dip the sour dough bread and beef bacon with Scarmoza Raclette. Soft and warm Scarmoza cheese just melting in my mouth!


Cheese can be eaten as it is, paired with a classy wine or even incorporated into any dishes – from cold to hot, sweet to spicy, from appetisers to desserts – most cheese recipes only need a few additional items added to the star ingredient to make them fantastic.




Cheese considered to be one of the most versatile foods in the world, with stringent quality control and regulations in Europe, European cheeses are always of the highest quality, and the best cheese products are readily available to the consumers in Malaysia.

Monash University Malaysia Celebrating 20 Years!


Monash Malaysia kicked off its 20th year celebration with a heart thumping, groovy party. There were balloons, party hats, face-painting, and henna art, as well as delicious food served up by local chefs. Satay-in-a-cup was a hit among the adults while the children satisfied their sweets craving with fluffy cotton candy.


Mouse mommy and family were enjoying the Monash University family day and 20th Anniversary Celebration so much!

The 1Malaysia Drum Symphony set the mood for the evening with its amazing fusion of Malay, Chinese and Indian drums. Keeping up the beat, was the main highlight of the night, SonaOne, a popular homegrown singer-songwriter and rapper, who got the crowd screaming and bopping along to his tunes.


Fantastic music throughout the night! Happy to be there to celebrate together! Happy 20th Anniversary Monash Malaysia!




Spinning foot tapping and dance inducing hit after hit was DJ Bate, who had everyone grooving late into the evening.


Monash University Malaysia 20th anniversary celebration was definitely one to remember! It wasn't just about the fantastic performances, delicious food and fun activities, but the opportunity to enjoy it all with the students, staff, alumni, media and members of the local community.

Fully Sponsored AEON Bakery School Programme For Passionate Baker Students



AEON CO. (M) BHD. becomes one of the leading retailers in Malaysia to introduce the AEON Bakery School programme, an initiative that grooms and trains individuals to become certified bakers. Students who successfully complete the programme will be offered employment opportunities by AEON at their outlets nationwide.

The AEON Bakery School aims to further AEON’s efforts to continue grooming the young talents from various family backgrounds, as well as provide an opportunity for Malaysians with a knack for baking or for those who want to acquire a new skill. This is in line with AEON Basic Philosophy, which always emphasizes on Peace, People and Community.


Managing Director of AEON CO. (M) BHD., Shinobu Washizawa said: “This initiative to provide guaranteed employment in AEON is our endeavour to support a niche division of the food segment in the country. With breads and other baked goods fast becoming a staple in our diet, we want to equip the industry with qualified bakers who are able to meet this demand. We believe that this programme can provide individuals, especially those who have high passion in bakery or desire to develop new skills the necessary training and support to secure a future in the industry.”

Endorsed and supported by the Department of Skills Development under the Ministry of Human Resource, the programme will be conducted by qualified professionals with over 22 years of working experience under AEON’s Merchandising Bakery team and AEON Food Processing Centre. These divisions are responsible for providing trainings to new bakers, creating new recipes as well as managing the production, preparation, handling and transportation of raw materials and ingredients to each outlet respectively.


To ensure that this programme is in line with Malaysian education standards, the format used for AEON Bakery School is similar to the skill training centre programme, in which it places a 20 percent emphasis on baking theories and 80 percent on industrial training.  For a period of eight months, students begin their two-and-a-half-month theory class at AEON’s very own bakery school in AEON MALL Metro Prima, before continuing a five-and-a-half month industrial training at one of the five registered AEON outlets located at Bandar Utama, Metro Prima, Mid Valley, Taman Maluri and Wangsa Maju.

The programme currently offers 2 intakes yearly, with up to 25 students per intake. Students are given a monthly allowance throughout the duration of the course, and will receive insurance coverage. Transportation and accommodation are also provided during the programme. Upon graduation, they will be awarded with the Malaysian Skills Certificate (Level 2) from the Department of Skills Development, and thereon absorbed as permanent employee of AEON as an in-house baker at any selected AEON Bakery.

Applications to the AEON Bakery School programme is open to all Malaysian citizens and selected AEON employees aged between 18 to 27 years old. Applicants must have either the academic qualification Penilaian Menengah Rendah (PMR) or Sijil Pelajaran Malaysia (SPM). AEON employees who have been in full-time service in any department for more than six months are also eligible to apply. 


“Through this pilot project, we hope for AEON to lead the way in cultivating talents in the baking industry and produce bakers with international standards. One day, we also hope for these talents to go out and make us proud by winning accolades from renowned establishments after having learnt the very basics from AEON Bakery School,” concluded Washizawa.

The event was officiated by Mr Nidzam Kamarulzaman, Director-General Department of Skills Development, Ministry of Human Resources in the presence of Washizawa. Following that was the unveiling of AEON Bakery School logo and a tour around the school.


After the opening speech by Mr Shinobu Washizawa, the first batch of AEON Bakery School students were presented with their offer letters from AEON CO. (M) BHD. Washizawa also received the Training Centre and Company Accreditation Certificate and the Induction Course Certificate on behalf of the school from Mr Nidzam Kamarulzaman.
